The Estate: Codorníu is the oldest family-owned business in Spain and one of the oldest wine companies in the world, dating back to 1551. They pioneered the production of Cava using the traditional method (Méthode Champenoise). The winery is located in Sant Sadurní d'Anoia, in the Penedès region of Catalonia, Spain. This area is known for its ideal climate and soil conditions for growing the grapes used in Cava production. They produce a wide range of Cavas under different labels, including Marqués de la Sardanapalus. These Cavas are made from traditional Spanish grape varieties such as Macabeo, Parellada, and Xarel·lo, along with other international varieties like Chardonnay and Pinot Noir.
Codorníu focuses on blending tradition with innovation, ensuring high-quality production while respecting the heritage and culture of Cava-making in Spain. Cava Brut is a dry sparkling wine, indicating that it has low residual sugar content. This makes it crisp and refreshing, often with citrus and green apple flavors. Like Champagne, Cava undergoes a secondary fermentation in the bottle (traditional method), which gives it its characteristic fine bubbles and complexity.
