Tasting Notes: 100% Chardonnay, showcasing the purity and expression of the Montgueux terroir. Pale gold with fine, persistent bubbles. Aromas of citrus fruits, white flowers, and a pronounced minerality, typical of Montgueuxs chalky soils. Fresh and vibrant acidity with flavors of lemon zest, green apple, and sometimes hints of brioche or almond from lees aging. The wine is known for its elegance and balance.

 

The Estate: The estate was established by Jacques Lassaigne in the 1940s. Over the years, it has grown from a small family operation into a respected name in the Champagne world. In the 1990s, Emmanuel Lassaigne, Jacquesson, took over the operations. Emmanuel has been pivotal in steering the estate towards a more organic and natural approach, focusing on expressing the unique terroir of Montgueux, which is located just west of Troyes, within the Aube department of the Champagne region. This area is somewhat of an outlier in Champagne, geographically closer to Chablis than to the heart of the Champagne region. Known for its chalky soils, which are similar to those found in the Côte des Blancs, Montgueux offers an ideal environment for Chardonnay. The regions southern exposure and unique microclimate contribute to the distinctiveness of its wines.

Emmanuel Lassaigne has embraced organic and biodynamic practices in the vineyard, though not necessarily certified. This includes minimal use of chemicals and a strong emphasis on maintaining soil health and biodiversity. Made using traditional methods, with minimal intervention to preserve the natural characteristics of the grapes and terroir. Emmanuel is known for his focus on low-dosage and non-dosage Champagnes, letting the true flavors shine through.

 

Suggested food and wine pairing: Versatile with food, it pairs well with seafood (like oysters and shellfish), creamy white meats (chicken, pork, turkey, veal), light poultry dishes, fish and chips, potato pancakes, tempura, salted nuts, prosciutto, and smoked salmon, spicy foods, creamy cheese (Camembert, Gruyere and other Swiss cheese, Parmigiano-Reggiano, Epoisse).
