The Estate: Billecart-Salmon is one of the esteemed and historic Champagne houses in France, renowned for its elegant and meticulously crafted wines. Founded in 1818 by Nicolas François Billecart and his wife Elisabeth Salmon in the village of Mareuil-sur-Aÿ, in the heart of the Champagne region. The marriage of Nicolas François Billecart and Elisabeth Salmon marked the union of two prominent winemaking families, establishing the legacy of the house. Remarkably, they remain family-owned and operated, now in its seventh generation. This continuity has allowed the house to maintain its traditions while also embracing innovation. The house is based in Mareuil-sur-Aÿ, but it sources grapes from a variety of prime locations across the Champagne region, including the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne.
Billecart-Salmon is renowned for its meticulous attention to detail in the winemaking process. They focus on achieving purity, finesse, and balance in their wines. A distinctive feature of the estate’s winemaking is their use of cold fermentation, a technique that preserves the freshness and delicate aromas of the wine. The wines are aged longer than the minimum requirements, allowing them to develop greater complexity and depth.
