Tasting Notes: This blend of 85% Glera and 15% Pinot Noir is a lovely example of Prosecco Rose. The delicate pink hue anticipates a subtle succession of floral scents of rose and eglantine, intensified by notes of white-fleshed fruits and delicious hints of fresh red berry fruits. The lively and vibrant nose perfectly matches the crisply lingering fresh- ness on the palate. Elegant lingering fine perlage. 10 grams of residual sugar.
The Estate: Cantine Bedin was established in the early 20th century by the Bedin family. The winery has been passed down through generations, maintaining its family-run heritage. They are situated in the heart of the Prosecco DOC region, specifically in the hills of Asolo, which is known for its ideal conditions for producing high-quality Prosecco. The winery emphasizes sustainable and environmentally-friendly viticulture practices. They focus on minimal intervention in the vineyard and the cellar to let the natural characteristics of the grapes shine through in the wine. While they uphold traditional winemaking techniques, they also incorporates modern technology to enhance the quality and consistency of their wines. The winery provides a charming setting with beautiful views, making it a delightful spot for both casual wine enthusiasts and serious connoisseurs.
The destemmed Glera grapes are soft pressed and immediately separated from skins. Primary fermentation occurs at low temperature to preserve the fresh fruit flavors that are typical from the Glera variety. On the other hand, crushed Pinot noir grapes under- go maceration in the style of a red wine. The juice is left in contact with the skins for 3-4 days to allow colour and aroma extraction from the skins.
Suggested food and wine pairing: Wine is great with appetizers like prosciutto and melon, bruschetta with fresh tomatoes and basil, smoked salmon canapés, seafood (shrimp cocktail, seared scallops with lemon butter, sushi or sashimi), salads (strawberry spinach salad with balsamic vinaigrette, goat cheese and beet salad), chicken Piccata (with lemon and capers), grilled salmon (with herb butter), pasta primavera (light pasta with fresh vegetables, garlic and olive oil), cheese (soft - Camembert; goat), desserts (fruit tarts, strawberry shortcake, macarons).
