The palate is focused and fresh, nicely savoury with a lovely texture leading to a dry, mineral finish.
The Estate: Cantine Bedin was established in the early 20th century by the Bedin family. The winery has been passed down through generations, maintaining its family-run heritage. They are situated in the heart of the Prosecco DOC region, specifically in the hills of Asolo, which is known for its ideal conditions for producing high-quality Prosecco. The winery emphasizes sustainable and environmentally-friendly viticulture practices. They focus on minimal intervention in the vineyard and the cellar to let the natural characteristics of the grapes shine through in the wine. While they uphold traditional winemaking techniques, they also incorporates modern technology to enhance the quality and consistency of their wines. The winery provides a charming setting with beautiful views, making it a delightful spot for both casual wine enthusiasts and serious connoisseurs.
After destemming and crushing, the grapes are cooled and allowed cryo-maceration (low-temperature pre-fermentative maceration) for about 12 hours: a winemaking technique that allows the extraction of primary aromas from the grape skins, enhancing the varietal character of the wine. The pressed juice is separated from suspended solids. The winemaker then selects a small portion of the total juice (5-10%) for barrel fermentation in used French oak barrels for a smoother flavour extraction. The remaining is fermented in stainless steel tanks, at controlled temperature to increase aroma retention. After fermentation the two base wines are blended and racked to a stain- less steel tank for some aging on the lees (which adds more complexity).
Suggested food and wine pairing: A great engaging partner for many menus and occasions; chicken, salads (with almonds, grapes, ginger), seafood, shellfish (lobster, mussels, crab), light fish, light pasta (carbonara, basil based), seafood risotto, vegetable dishes (tomato based, pumpkin), cheese (goat, feta, mozzarella), fruity desserts (with peach, apricot, honey melon).
