Tasting Notes: Bright, light straw in colour, with a delicate, persistent foam and a fine-grained perlage. On the nose it displays an elegant bouquet with typical notes of green apple, lychee and white blossoms. Well balanced, crisp and refreshing on the palate with some apple notes which carry through to a pleasant, lingering finish. 9g of residual sugar.
The Estate: Cantine Bedin was established in the early 20th century by the Bedin family. The winery has been passed down through generations, maintaining its family-run heritage. They are situated in the heart of the Prosecco DOC region, specifically in the hills of Asolo, which is known for its ideal conditions for producing high-quality Prosecco. The winery emphasizes sustainable and environmentally-friendly viticulture practices. They focus on minimal intervention in the vineyard and the cellar to let the natural characteristics of the grapes shine through in the wine. While they uphold traditional winemaking techniques, they also incorporates modern technology to enhance the quality and consistency of their wines. The winery provides a charming setting with beautiful views, making it a delightful spot for both casual wine enthusiasts and serious connoisseurs.
The grapes are destemmed and soft pressed, suspended solids are separated from grape juice using flotation. The juice is then racked into temperature-controlled stainless steel tanks for fermentation. Low temperature during this 10- 15 days-long process is key to preserving the fresh fruit flavors that are typical from the Glera variety. Secondary fermentation (the phase during which the still, base wine is transformed into a sparkling wine) is achieved through the Martinotti-Charmat method: they introduce the still wine into pressurised stainless-steel tanks along with selected yeasts and sugar which stimulate the production of natural bubbles of carbon dioxide in the wine. After achieving DOCG certification, our Asolo Prosecco is finally bottled under pressure, to preserve the bubbles, using our state-of-the-art bottling line.
Suggested food and wine pairing: Thanks to the lower residual sugar, this Prosecco superiore is suitable for many occasions. Easy drinking and elegantly refreshing, it is excellent with seafood (shrimps, lobster, mussels and oysters), appetizers and light meals (bruschetta, olives, mushrooms, prosciutto, salami with breadsticks, artichokes), great with nuts (almonds, cashew) but it is also delicious on its own as an aperitif.
